FARM TO TABLE, A MODERN CONCEPT
Fresh, locally-sourced products
When we talk about a restaurant applying the "farm-to-table" we refer to an establishment that prepares its menu with as many locally sourced products as possible. These products are much fresher and are carefully grown to literally take them directly from the farm to your table, passing through fewer intermediaries (or often bypassing any).
In a typical "farm to table" restaurant you hire a local producer as your fruit, vegetable and animal product vendor. It is common for restaurant managers and Executive Chefs to personally visit these places to meet farmers, oversee safety, food handling, distribution processes, animal care and so on. In some cases, Chefs come to the farms during harvest season to access top-quality products first hand for their restaurants.
